Shrimp and Roasted Cauliflower Over Rice with Jalapeño Garlic Sauce

This recipe is pretty simple and something that I like to eat often. It includes sautéed shrimp, oven roasted cauliflower and a tangy/spicy green garlic sauce served over brown rice.
I shared my kitchen remodel a couple weeks back that was completed in partnership with KitchenAid and Lowe’s.
Now I’m putting my new kitchen to the test with this delicious shrimp and roasted cauliflower dish.
I’m a shrimp lover. If I could eat crustaceans everyday I would! My mom would always sauté shrimp and serve it with rice and Korean side dishes. Instead of serving this dish with traditional fermented side dishes, the jalapeño garlic sauce serves as a hint of those flavors. Hope you enjoy this dish! It’s inspired from a dish my mom makes at home with a contemporary twist. Let’s begin!
For this dish, you need really fresh produce. My new KitchenAid® French Door Refrigerator pulls out all the stops to keep your farmer’s market hauls at peak freshness throughout the week. The crisper and pantry drawers allow you to control the humidity and temperature levels and the produce preserver helps prevent produce from over ripening.
Remove the cauliflower, green and yellow onion, garlic, jalapeño, red pepper, cilantro, cauliflower and shrimp from your refrigerator and begin by prepping the ingredients. Using the Chef Knife from my KitchenAid® Cutlery Set, chop all the vegetables.
Preheat the oven to 450 degrees F. I placed the chopped cauliflower in the largest dish from my Ceramic Nesting Bowl Set and drizzle with olive oil, salt, and pepper. Add the chopped onions to the pan and roast until brown, roughly 20-25 minutes.
